Hello Marten,
do you know "Village Telco"? http://www.villagetelco.org/ They use wifi for data and voice connections in a mesh network with low-cost hardware and open source software. Primary for voip (asterisk).
E.g. they have set up containers with their hardware in south africa.
May be an other / alternative way :)
