I am sure your implementation is correct.
However, I have the feeling that almost all cards have issues with that commend. When I
try an eSIM-me card for example, the card/os crashed and now I get this:

Did it work for you? I would expect that when a card has (operational) profiles on it,
that those profiles should vanish when I do "euicc_memory_reset
--delete-operational"
