Yes, that's exactly what the wireshark dissector does, that we
contributed to wireshark years ago.

The easiest way would be to grab one of simtrace devices, plug it between your phone
and sim and and run "./simtrace -i 127.0.0.1" - you'll get sim's apdu
wrapped inside
gsmtap in your wireshark right away.
