Hi Simon,
If you've got the repository cloned onto your system and run the build instructions from the Wiki successfully, you should just be able to run the software from the src directory with:
sudo ./simtrace
There is no Wireshark plugin, the simtrace software just sends the ADPUs to the loopback address so you can view them in Wireshark.

I installed the SIMtrace software on an Ubuntu box recently without any issues, maybe if you could elaborate as to where you're stuck we can help further?
