The SIMtrae project is a collaborative, community based project. Anyone can extend it as they want, the full source code to the firmware is published. The flash chip on the device indeed was intended for persistent storage of logs, so you can capture data without a USB host attached, and then later read it out. However, nobody seems to have been interestd enough yet to contribute this feature. Would you be interested in working on this? Please note that SIMtrace is open hardware and the SIMtrace firmware is open source software. Anyone can manufacture the devices (modified or unmodified), and can copy + modify the softare At sysmocom, We do have a couple of SIMtrace v1.4p boards with SAM3 instead of the SAM7 available. Please write to sales at sysmocom.de if you would like one. Pricing will be the same instead of SAM7. There is no fully working firmware for SIMtrace with SAM3 at this point yet. Once I get around cleaning this up (it really is in no useful state right now), it will be released just like the old SIMtrace firmware for SAM7. You can manufacture the SIMtrace hardware based on this design anywhere. sysmocom ships the hardware world-wide, as far as no EU or German export regulations prevent it.
